As postdoctoral researcher at Ghent University Koenraad has been exploring the possibilities of mass spectrometry tools, e.g. MALDI-TOF MS, for describing and monitoring microbiota associated with various environments but his main attention is still drawn towards the many microbial aspects related to food.
