Koenraad Van Hoorde describes how next-generation sequencing is being utilized in food safety and testing systems in this exclusive interview filmed at Asset 2018. As postdoctoral researcher at Ghent University Koenraad has been exploring the possibilities of mass spectrometry tools, e.g. MALDI-TOF MS, for describing and monitoring microbiota associated with various environments but his main attention is still drawn towards the many microbial aspects related to food.
